Historically Chickpeas have been used almost since recorded time began. They have recorded uses of Chickpeas in Italy and Greece since the Bronze Age. Chickpeas are believed to be one of, if not the oldest cultivated vegetables. There is evidence to suggest chickpeas roasted  were used as far back as 9500BC.

There are 2 types of Chickpeas cultivated today. The "Desi" cultivated in India, Mexico and Ethiopia and the "Kabuli" Commonly cultivated in Northern Africa, Southern Europe, Afghanistan, Pakistan and Chile.

Are garbanzo beans chickpeas?

Chickpeas, also commonly known as Garbanzo beans, are botanically classified as Cicer arietinum of the plant family 'Fabaceae'. They are an annual crop used as a feed for Humans and Livestock. Peas and Beans are the major source of Protein (protein powder) in Vegan and Vegetarian diets.

Dahl Chickpeas (split chickpeas) is one of the most popular varieties, which are from the Desi Chickpeas. Kabuli Chickpeas are usually consumed as a whole pea seed and also we ccan use  chickpeas with pasta.

The consumption of Chickpeas and other pulses are is coming more popular as people are recognising the nutritional value of them and other Pulses specially with vegetable soup.

In Australia only a small portion of its total Chickpea crop is consumed with the majority shipped to India amongst other countries.

Chickpeas are high in B Vitamins (Thiamine, Riboflavin, Niacin, Folate, Pantothenic acid and Vitamin B12) Vitamin C, Vitamin E and Vitamin K. they are high in Zinc, Iron, Calcium, Magnesium, Phosphorous and Potassium.  Chickpeas contain around 8g of Dietary Fibre per 100g.

Chickpeas are high in lysine, an amino acid used by the body for many functions including muscle  repair and for maintaining muscle mass. Lysine aids in the production of hormones.

-Chickpeas form the basis of Hummus. A popular dip or spread consumed throughout the Middle East and popular in other countries. To make Hummus, Chickpeas are cooked then mashed and combined with tahini, lemon juice, olive oil, salt and garlic. There is also a Chickpea Guacamole where Hummus is combined with Avocado also can make chickpeas salad ,chickpeas pasta, chickpeas curry.

How to cook chickpeas properly?

Chickpeas should be soaked overnight to soften. This can dramatically reduce cooking time. Chickpeas are available in cans, which are ideal if soaking is not an option.

Stir Chickpeas through soups for flavour and as a thickener.

Add to soups and stews for filler, nutritional value and thickening.

Use with other vegetables with your favourite meat dish or use as a substitute to meat for Vegan and Vegetarian diets.

Ideal added to fresh salads including Pasta salads and summer leaf salads.

Chickpea Salad

Ingredients: (make calories calculator)

4 cups cooked, drained and rinsed chickpeas
 ½ cup diced red pepper
 ½ cup diced sweet pepper 
 ½ cup sliced black olives (drained and rinsed)
 ½ cup diced purple onion 
 ¼ cup chopped parsley
 ¼ cup shredded carrots
 3 tbsp each extra virgin vegetable oil and juice 
 3 pinches kosher salt
 4 pinches pepper
 4 pinches of dry mint

Directions:

Combine all vegetables and parsley during a large bowl and toss. Add vegetable oil and juice mix. Add salt, pepper, and mint. Toss all ingredients and until mixed thoroughly. you'll function as an entremets or because of the first course.

Note: you'll try adding feta cheese or fresh cheese as a garnish or to your taste. I even have added fried fruit (like raisins) to the present salad for an exquisite twist on a well-known Mediterranean salad.


You don't need to be vegan to eat vegan food to loss weight fast. Quick Cinnamon Apple Chips

What you need:

2 red apples, thinly sliced
2 teaspoons sugar
1/2 teaspoon cinnamon
In a bowl, sprinkle apple slices with sugar and cinnamon, tossing to coat fruit evenly. Arrange apples during a baking sheet so that they do not overlap. Bake during a pre-heated oven (200F) until dried and crisp (but still pliable), about 2 to three hours. Serve immediately. also cinnamon apple pancakes so yummy but not vegan snacks. 

Garlic, Lime and Avocado Hummus

What you need:

2 ripe avocado fruit , cored and peeled
2 cloves garlic clove (garlic aioli)
2 cups canned chickpeas
1/3 cup tahini
1/4 cup fresh juice 
3 tablespoons vegetable oil 
1/4 teaspoon cumin...... It can be added limerick according to your desire

Kosher salt

1 tablespoon chopped cilantro for garnish
Red pepper flakes, for garnish
In a blender or kitchen appliance, combine the avocados (avocado mattress), chickpeas, garlic, tahini, juice, and vegetable oil. Season with kosher salt. Blend until the mixture is smooth. Transfer mixture into a serving bowl then top with chopped cilantro and red pepper flakes. Best served with whole wheat bread or chips.

Healthy Trail Mix Snack Balls (snacks healthy)

What you need:

1 cup old-fashioned oatmeal 
3/4 cup creamy spread, melted
1/2 cup mini bittersweet chocolate chips
1/4 cup mini M&Ms
1/4 cup chopped peanuts
1/4 cup raisins
1 tablespoon honey
Kosher salt
Mix the old-fashioned oatmeal, spread, bittersweet chocolate chips, M&Ms, peanuts, raisins, and honey. Season with kosher salt (depending on your required saltiness). Stir until ingredients are well-combined. Scoop into small balls (about a tablespoon in size) and arrange during a plate. Cover and refrigerate until firm, about 1 to 2 hours. you can also make chocolate chips vegan cookies.

Green Apple Nachos

What you need:

2 green apples, cored and sliced into wedges, chilled
1/4 cup all-natural spread, warmed
2 tablespoons granola
1 tablespoon dried cranberries
Arrange apple wedges on a serving plate. employing a spoon, drizzle generously with the warmed spread. Top with granola bits and dried cranberries. Serve immediately.
